JPG or PNG: which should I pick for my PDF?

JPG for pages that are mostly photos or scans, where a small file matters more than perfect edges. PNG for pages with sharp text, screenshots, logos or transparency, where you want lossless quality. JPG files are usually several times smaller.

Will the text stay selectable?

No. The pages are rasterised into images, so text becomes pixels rather than characters. If you need selectable text, convert to Word or keep the file as a PDF.

Is there a page limit?
